Lemon Pound Cake

5 Eggs

3 c of all purpose flour

1 c of unsalted butter (softened)

2 c sugar

3/4 c of low fat buttermilk

1/3 c lemon juice

1/2 teaspoon baking soda

1/2 teaspoon baking powder

2  8-inch round baking pans

*Preheat oven to 350 degrees. Grease and flour (lightly) the bottom of both pans. In a bowl, mix buttermilk and lemon juice. Slowly add in flour, baking soda, and baking powder. With electric mixer combine butter and sugar until light. Then slowly add the eggs in the bowl. Slowly add in the buttermilk and lemon juice mixture. Beating on a low speed. Divide the batter between the two pans. Bake 50-60 minutes.
